Stainless steel roasting hood : Made from quality stainless steel Sapphire 6 roasting hood is easy to clean and is ideal for roasting, grilling or even baking. Outback hooded models are so versatile, once you have finished cooking, you can turn off the barbecue and pull down the hood and the food sitting on the grills and griddles will keep warm for a good 30 minutes afterwards. A smoker box may also be used with barbecues with a roasting hood, allowing flavoured chips to be used to enchance the taste of your barbecued food.

The Sapphire 6 comes with new flavouriser bars (not traditional lava rock).
What are flavouriser bars? Flavouriser bars are used instead of lava rock. They fit above the stainless steel burners and under the grill top. They aid the distribution of heat. They are also designed to channel away excess grease and avoid bad flareups. Fat and juices drip from cooked meat, hits the flavoriser bars and vaporises into smoke and steam which flavours the food on the grill.

Wondering whether to buy a flatbed or a hooded barbecue?

We would highly recommend a hooded barbecue!

1. A HOODED BARBECUE (with roasting hood/lid), allows food to be cooked at a more even temperature while cooking with the (hooded) lid closed. Outback Roasting Hoods are fitted with a heat indicator ensuring the correct cooking temperatures are reached = SAFER, heathy barbecued food for you and your family.

2. Optional Extra : BATTERY POWERED ROTISSERIE may be easily fitted for larger peices of meat or whole chickens. Food is cooked with the Roasting Hood down, prior to finishing off with the hood open.

3. Optional Extra : SMOKER BOX & Flavoured Chips or Herbs produces delicious smokey/flavored food.
Smoker boxes are filled with the flavouring of your choice, then placed directly above the heat source, food is barbecued above, on the grills as normal.
Smokers work best for fatty meats, such as pork ribs and chicken thighs. As the food cooks at a low temperature within the bbq hood, the fat melts away, basting the meat as it goes. What you're left with is not greasy, but rich and flavourful.

4. Food can easily to be kept hot under the hood using a warming rack.

5. The barbecue is easily covered or shielded from showers or windy weather.

6. Food can be kept safely out of the way of insects etc.,
